Cucumber Raita
Ingredients
- Cucumber (medium sized-peeled, seeded and shredded)-1
- Nonfat plain yogurt or curd- ¼ cup
- Scallions (minced) according to taste
- Fresh Cliantro (chopped) to taste
- Limejuice to taste
- Honey to taste
- Spices like- cinnamon, cardamom, and turmeric -to taste.
Method
- Combine all the ingredients according to your own taste preferences.
- Toss gently and refrigerate it for an hour and serve it.

Potato raita
Ingredients
- Potato- medium sized and cut into bite-size pieces
- Chili flakes according to taste
- Scallions or spring onions (finely chopped)-1Tbs.
- Cliantro (fresh and chopped) to taste
- Nonfat plain yogurt or curd- ¼ cup
- Mustard seeds to taste
- Limejuice to taste
- Mustard oil.
Method
- Heat the oil in a small skillet, add mustard oil and cumin seeds.
- When cumin seeds sputter add the potatoes and chili flakes. Sauté them while stirring continuously.
- Cook the potatoes for 20 minutes and cool them.
- Now, mix it with all the other ingredients and toss gently.
- Refrigerate until one hour before serving.
Prominent taste- Astringent, pungent, Sour. Serves-1
