Curd preparations or raita

Cucumber Raita


  • Cucumber (medium sized-peeled, seeded and shredded)-1
  • Nonfat plain yogurt or curd- ¼ cup
  • Scallions (minced) according to taste
  • Fresh Cliantro (chopped) to taste
  • Limejuice to taste
  • Honey to taste
  • Spices like- cinnamon, cardamom, and turmeric -to taste.


  • Combine all the ingredients according to your own taste preferences.
  • Toss gently and refrigerate it for an hour and serve it.

Potato raita


  • Potato- medium sized and cut into bite-size pieces
  • Chili flakes according to taste
  • Scallions or spring onions (finely chopped)-1Tbs.
  • Cliantro (fresh and chopped) to taste
  • Nonfat plain yogurt or curd- ¼ cup
  • Mustard seeds to taste
  • Limejuice to taste
  • Mustard oil.


  • Heat the oil in a small skillet, add mustard oil and cumin seeds.
  • When cumin seeds sputter add the potatoes and chili flakes. Sauté them while stirring continuously.
  • Cook the potatoes for 20 minutes and cool them.
  •  Now, mix it with all the other ingredients and toss gently.
  • Refrigerate until one hour before serving.

Prominent taste- Astringent, pungent, Sour. Serves-1
