Carrot soup
Ingredients
- Medium sized carrots (finely diced)-2
- Onions (diced)- 1 Tbs.
- Vegetable broth-11/2 Cup
- Salt to taste
- Olive oil
- Ground ginger to taste
- Spices like clove powder, chili flakes, cardamom, turmeric, and cinnamon according to taste.
Method
- Heat olive oil in a pan to the smoking point and sauté carrots and onions in it.
- Now add vegetable broth in the pan.
- Add the remaining ingredients and with the help of soup blender, process it until the required consistency of soup is attained.
- Simmer for 10 minutes and serve warm.
Prominent taste- Sweet, Pungent Serves-2.
Spinach soup
Ingredients
- Spinach-2 bunches (approx.- 200 gms)
- Celery stalks-2
- Vegetable broth-1 Cup
- Salt to taste
- Sugar to taste
- Plain nonfat yogurt to taste
- Spices like tarragon, thyme, nutmeg
- Oil.
Method
- Heat the oil in a large saucepan up to the smoking point.
- Sauté the spinach until they are just tender.Now add vegetable broth in it and add all the spices except nutmeg and yogurt. Simmer it for 10 minutes.
- After removing it from heat add nutmeg powder and process it in a soup blender.
- Serve warm and garnish it with yogurt.
Prominent taste- Bitter, Astringent, Pungent, Sweet. Serves-2
